Spice Rubbed Steak Recipe with Flatbread and Tahini
Ingredients:
- 1 pound beef steak (such as flank or skirt steak)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon ground cloves
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cinnamon
- Salt and pepper, to taste
- Olive oil, for drizzling
- Garlic, minced
- Flatbread or pita bread, for serving
- Arugula, for serving
- Tomatoes, thinly sliced, for serving
- Red onion, thinly sliced, for serving
- Tahini sauce, for serving
Instructions:
1. Prepare the spice rub by combining cumin, coriander, paprika, turmeric, ground cloves, cayenne pepper, and cinnamon in a small mixing bowl. Set aside.
2. Use a meat mallet to tenderize the steak. Transfer the steak to a glass baking dish and season with salt and pepper. Drizzle with olive oil and rub on minced garlic. Sprinkle the homemade dry rub evenly over the steak, pressing it gently into the meat to help it adhere. Cover with plastic wrap and refrigerate overnight.
3. Remove the steak from the refrigerator 1 hour before grilling. Preheat your pellet grill, gas or charcoal grill to medium-high heat (450°F).
4. Grill the steak for 3 to 5 minutes per side, then remove from the grill and let it rest for 10 minutes. While the steak is grilling, warm the flatbread or pita bread on the upper rack of your grill.
5. Slice the steak thinly against the grain and wrap in flatbread or pita. Top with arugula, tomatoes, red onion, and drizzle with tahini sauce. Serve immediately.
